Ingredients
- 4 to 6 boneless pork chops, cut in 1 inch cubes
- 1 (20 oz.) can pineapple chunks, drained (reserve liquid)
- 1 green pepper, cut in 1 to 2-inch strips
- 2 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1/4 c. brown sugar
- rice, cooked
Method
- Brown pork in small amount of oil in a large frying pan.
- Add water to reserved pineapple juice to make 1 3/4 cups.
- Add pepper to pork after about 5 to 10 minutes.
- Saute about 5 minutes.
- Add juice, salt and pepper to taste and simmer, covered, until pork is tender.
