Ingredients

  • 4 to 6 boneless pork chops, cut in 1 inch cubes
  • 1 (20 oz.) can pineapple chunks, drained (reserve liquid)
  • 1 green pepper, cut in 1 to 2-inch strips
  • 2 Tbsp. cornstarch
  • 2 Tbsp. soy sauce
  • 1/4 c. brown sugar
  • rice, cooked

Method

  • Brown pork in small amount of oil in a large frying pan.
  • Add water to reserved pineapple juice to make 1 3/4 cups.
  • Add pepper to pork after about 5 to 10 minutes.
  • Saute about 5 minutes.
  • Add juice, salt and pepper to taste and simmer, covered, until pork is tender.
