Ingredients

  • 1kg of skate wings
  • 2 tbsp of unsalted butter
  • 3-4 tbs of capers
  • salt
  • freshly cracked pepper

Method

A kilogram of skate wings will yield enough fillet to feed 4.

Cut each skate fillet into 2 or 3 manageable pieces, making sure they're skinned. Heat a couple of tablespoons of unsalted butter in a frypan until it foams. Fry the skate pieces, making sure they have plenty of room in the pan and don't overlap each other. Depending on the fillet's thickness, it should take 2 to 4 minutes a side. Make sure the flame is not too high and doesn't burn the butter.

Once the first side is cooked, turn the skate pieces and add 3-4 tablespoons of well-rinsed, whole, salted capers so that they sizzle and crisp up in the butter. When the fish is cooked through, season with a little salt and freshly cracked pepper.

To serve 

Serve the skate on individual plates with the capers and butter spooned over it.
