- 3 c. old fashioned oatmeal
- 1 c. all-purpose flour
- 2 tsp. ground cinnamon
- 1/4 tsp. salt (if peanut butter is unsalted)
- 1/4 tsp. ground nutmeg
- 1 tsp. baking soda
- 1 c. unsalted butter (at room temperature)
- 1 c. peanut butter (chunky or smooth)
- 1 c. firmly packed light brown sugar
- 1 c. granulated sugar
- 1 tsp. vanilla
- 2 eggs
- 1 1/2 c. semi-sweet chocolate chips or raisins
Method
- Mix the oatmeal, flour, cinnamon, salt, nutmeg and baking soda; set aside.
- Beat together the butter, peanut butter, brown sugar and granulated sugar at medium speed until light and fluffy, approximately 4 minutes.
- Beat in the vanilla.
- Add the eggs, one at a time; beat 1 minute after each.
- Add the chocolate chips or raisins.
- Beat in oat mixture on lowest speed just until blended. Chill dough.
- Make balls and flatten.
- If you do not chill, drop by spoonfuls.
- Bake at 350° for 12 to 15 minutes.
