Ingredients

  • 3 c. old fashioned oatmeal
  • 1 c. all-purpose flour
  • 2 tsp. ground cinnamon
  • 1/4 tsp. salt (if peanut butter is unsalted)
  • 1/4 tsp. ground nutmeg
  • 1 tsp. baking soda
  • 1 c. unsalted butter (at room temperature)
  • 1 c. peanut butter (chunky or smooth)
  • 1 c. firmly packed light brown sugar
  • 1 c. granulated sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 c. semi-sweet chocolate chips or raisins

Method

  • Mix the oatmeal, flour, cinnamon, salt, nutmeg and baking soda; set aside.
  • Beat together the butter, peanut butter, brown sugar and granulated sugar at medium speed until light and fluffy, approximately 4 minutes.
  • Beat in the vanilla.
  • Add the eggs, one at a time; beat 1 minute after each.
  • Add the chocolate chips or raisins.
  • Beat in oat mixture on lowest speed just until blended. Chill dough.
  • Make balls and flatten.
  • If you do not chill, drop by spoonfuls.
  • Bake at 350° for 12 to 15 minutes.
