Ingredients
- 1 c. uncooked regular rice
- 3/4 c. chopped celery
- 1 Tbsp. chopped onion
- vegetable cooking spray
- 2 c. orange juice
- 2 tsp. grated orange rind
- 1/2 tsp. salt
Method
- Coat a large skillet with vegetable cooking spray and place over medium heat until hot.
- Add rice, celery and onion.
- Cook, stirring occasionally, until rice is lightly browned.
- Add remaining ingredients and bring to a boil.
- Pour mixture into a 1 1/2-quart casserole.
- Cover and bake at 350° for 25 to 30 minutes or until done.
- Contains about 130 calories per 1/2 cup serving.
