Ingredients

  • 1 c. uncooked regular rice
  • 3/4 c. chopped celery
  • 1 Tbsp. chopped onion
  • vegetable cooking spray
  • 2 c. orange juice
  • 2 tsp. grated orange rind
  • 1/2 tsp. salt

Method

  • Coat a large skillet with vegetable cooking spray and place over medium heat until hot.
  • Add rice, celery and onion.
  • Cook, stirring occasionally, until rice is lightly browned.
  • Add remaining ingredients and bring to a boil.
  • Pour mixture into a 1 1/2-quart casserole.
  • Cover and bake at 350° for 25 to 30 minutes or until done.
  • Contains about 130 calories per 1/2 cup serving.
