Ingredients

  • 1 teaspoon olive oil
  • 8 boneless pork chops
  • 8 ounces beef stock or broth
  • 1 tablespoon apple cider vinegar or plain vinegar
  • 1 tablespoon brown sugar dark or light
  • 1 green bell pepper chopped
  • 1/8 teaspoon orange zest
  • 1 orange segmented large
  • 1/2 cup orange juice

Method

  • In a skillet, drizzle olive oil and brown pork chops. Remove pork chops.
  • Stir together beef both or stock, apple cider vinegar or vinegar, brown sugar, and 1/4 cup orange juice. Pour a little in the bottom of the skillet. Put chops and any juice back into the skillet.
  • Add green bell pepper. Pour remaining stock mixture over pork chops in skillet. Cover and simmer on medium low for 30 minutes.
  • Turn to low heat. Add orange zest and orange segments. Cover and simmer 15 more minutes.
  • Remove lid. Add 1/4 cup more orange juice. Simmer uncovered on low heat an additional 5-10 minutes until sauce is desired consistency.
