Ingredients

  • 1 small can pineapple chunks
  • 1 c. chopped dates
  • 1 jar Simply Fruit orange jam
  • 1/2 c. boiling water
  • 1/3 c. honey
  • 2 egg whites
  • 1 tsp. vanilla
  • 1 c. whole wheat flour
  • 1 c. cake flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt

Method

  • Preheat oven to 325°.
  • Boil water and put in dates.
  • Turn down to simmer; cover and set aside.
  • Combine orange jam, pineapple, honey, egg whites and vanilla.
  • Remove dates from steaming water and mix with mixture.
  • Sift flours, soda and salt.
  • Add the orange mixture to the flour mixture.
  • Fill two bread loaf pans half full. Bake for 30 minutes or until a toothpick comes out clean.
