Ingredients

  • 1/2 c. frozen unsweetened juice concentrate
  • 1 egg
  • 1/4 c. diet margarine
  • non-nutritive sweetener equivalent to 1 c. sugar
  • 1 c. flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1/2 c. pecans, chopped fine

Method

  • Preheat oven to 375°.
  • Cream first 4 ingredients; beat well. Sift flour, salt and baking powder; add to creamed mixture.
  • Mix gently until just blended; add vanilla and nuts.
  • Drop by teaspoonfuls on lightly greased heavy-duty foil; bake until lightly browned, about 15 minutes.
