Ingredients
- 3 chopped onions
- 2 lb. cubed potatoes
- 1 c. buttermilk
- 1 c. water
- 1 1/4 tsp. salt
- 1/8 tsp. pepper
Method
- Combine all ingredients in saucepan and simmer covered for 20 minutes or until potatoes are tender.
- Drain, reserving liquid. Add 3/4 cup of liquid to potatoes and mash.
- Add more cooking liquid to thin if necessary.
