Ingredients

  • 1 cup chicken broth
  • 4 cups water
  • 3 chicken drumsticks
  • 1 medium chopped onion
  • 1 cup frozen mixed vegetables
  • 2 chopped garlic cloves
  • salt
  • 12 cup fresh cilantro (I use about 1/2 cup)
  • 5 small new potatoes
  • 1 tablespoon vegetable oil

Method

  • In a 5 qt pot add vegetable oil and chopped onion.
  • Cook down until onion appears carmelized.
  • Add water, chicken broth, pinch of salt and drumsticks.
  • Bring to a boil.
  • Lower heat, and simmer drumsticks for approximately 30 minutes.
  • Add potatoes and simmer for another 30 minutes.
  • Add mixed vegetables, garlic and cook for another 30 minutes.
  • Add cilantro at the end, and check for seasoning to taste.
