Ingredients

  • 2 1/2 sticks margarine or butter (1 c. plus 4 Tbsp.)
  • 3 c. sugar
  • 6 eggs
  • 3 c. plain flour
  • 8 oz. sour cream
  • 1/4 tsp. salt
  • 1/4 tsp. soda
  • 1 tsp. vanilla
  • 1 pkg. frozen coconut

Method

  • Defrost coconut.
  • Eggs and butter should be at room temperature.
  • Preheat oven to 300°.
  • Spray pan with oil spray. Cream the butter and sugar together well. Add eggs, one at a time, and mix well. Add flour, salt, soda, sour cream and vanilla. Blend.
  • Stir in coconut.
  • Bake 1 hour and 15 minutes or until done.
