Ingredients
- 2 1/2 sticks margarine or butter (1 c. plus 4 Tbsp.)
- 3 c. sugar
- 6 eggs
- 3 c. plain flour
- 8 oz. sour cream
- 1/4 tsp. salt
- 1/4 tsp. soda
- 1 tsp. vanilla
- 1 pkg. frozen coconut
Method
- Defrost coconut.
- Eggs and butter should be at room temperature.
- Preheat oven to 300°.
- Spray pan with oil spray. Cream the butter and sugar together well. Add eggs, one at a time, and mix well. Add flour, salt, soda, sour cream and vanilla. Blend.
- Stir in coconut.
- Bake 1 hour and 15 minutes or until done.
