Ingredients

  • 1 1/2 lb. lean beef, cut into 2-inch cubes
  • oil
  • 3/4 tsp. pepper
  • 1/2 tsp. thyme
  • 3 Tbsp. catsup
  • 2 Tbsp. worcestershire
  • 2 bay leaves
  • 3 sprigs parsley
  • 1 clove garlic, minced
  • 3 c. water
  • 2 to 3 beef bouillon cubes
  • 2 stalks celery, cut in 2-inch pieces
  • 6 large carrots, cut in thirds
  • 4 to 5 large potatoes, cut in quarters
  • 2 large onions, quartered

Method

  • Brown beef in oil.
  • Add seasonings, celery and water.
  • Simmer over low heat for 2 hours.
  • Add remaining vegetables and simmer 45 to 60 minutes or until vegetables are tender.
  • Serves 6.
