- 1 1/2 lb. lean beef, cut into 2-inch cubes
- oil
- 3/4 tsp. pepper
- 1/2 tsp. thyme
- 3 Tbsp. catsup
- 2 Tbsp. worcestershire
- 2 bay leaves
- 3 sprigs parsley
- 1 clove garlic, minced
- 3 c. water
- 2 to 3 beef bouillon cubes
- 2 stalks celery, cut in 2-inch pieces
- 6 large carrots, cut in thirds
- 4 to 5 large potatoes, cut in quarters
- 2 large onions, quartered
Method
- Brown beef in oil.
- Add seasonings, celery and water.
- Simmer over low heat for 2 hours.
- Add remaining vegetables and simmer 45 to 60 minutes or until vegetables are tender.
- Serves 6.
