- 6 apples peeled, cored and halved
- 2 tablespoons lemon juice
- 9 tablespoons butter or margarine
- 1/2 cup sugar
- 1/2 vanilla pod with the seeds scraped out
- 1 pinch salt
- 2 eggs
- 1 1/3 cups all purpose flour
- 1 teaspoon baking powder
- 1 ounce sliced almonds
- 1 tablespoon apricot jam
- 1 tablespoon powdered sugar
- whipped cream to serve
Method
- Sprinkle the apple halves with lemon juice. Preheat the oven to 325°F. Mix the butter, sugar, vanilla seeds and salt with a hand mixer. Stir in the eggs one at a time and fold in the flour and baking powder a bit at a time. Pour the mixture into a greased 10 inch diameter springform cake pan, smooth and evenly distribute the apples on top. Sprinkle with almonds and bake for 40-45 mins. Cool on a wire rack.
- Heat the jam to melt. Brush the apple halves with the warm jam, remove the cake from the pan and sprinkle with powdered sugar. Serve with whipped cream.
