- 1 cup butter
- 1 1/2 cups firmly packed brown sugar
- 1 teaspoon salt
- 3/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 allspice
- 1/4 cup buttermilk or milk
- 2 eggs
- 1 1/2 cups flour
- 1 1/2 cups quick-cooking rolled oats
- 1 cup flaked coconut
- frosting Browned butter, optional
- 1/4 cup butter
- 2 cups confectioner's sugar sifted
- 1/2 teaspoon vanilla
- 2 tablespoons milk to 3
Method
- Cream butter and brown sugar until fluffy. Add salt, baking soda, cinnamon, allspice, buttermilk and eggs; beat well. Stir in flour, oats, nuts and coconut. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Frost if desired
- To make the frosting, Brown butter in saucepan. Stir in confectioner's sugar and vanilla. Blend in milk until of spreading consistency.
