Ingredients

  • 1 cup butter
  • 1 1/2 cups firmly packed brown sugar
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 allspice
  • 1/4 cup buttermilk or milk
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 cups quick-cooking rolled oats
  • 1 cup flaked coconut
  • frosting Browned butter, optional
  • 1/4 cup butter
  • 2 cups confectioner's sugar sifted
  • 1/2 teaspoon vanilla
  • 2 tablespoons milk to 3

Method

  • Cream butter and brown sugar until fluffy. Add salt, baking soda, cinnamon, allspice, buttermilk and eggs; beat well. Stir in flour, oats, nuts and coconut. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Frost if desired
  • To make the frosting, Brown butter in saucepan. Stir in confectioner's sugar and vanilla. Blend in milk until of spreading consistency.
