Ingredients

  • 2 c. boiling water
  • 1 c. old fashioned rolled oats
  • 2 envelopes dry yeast
  • 1/3 c. warm water
  • 2 1/2 tsp. salt
  • 1/2 c. honey or molasses
  • 2 Tbsp. butter
  • about 6 c. flour

Method

  • In a large bowl, pour boiling water over oats; let stand for 1/2 hour.
  • Dissolve yeast in warm water; let stand 5 minutes. Stir salt, molasses and butter into oats.
  • Stir in yeast. Gradually add 4 cups flour.
  • Knead in remaining 2 cups flour. Shape dough in mound in center of bowl.
  • Cover; let rise in warm place until double.
  • Punch down.
  • Divide dough in half.
  • Shape into loaf.
  • Place in well-greased loaf pans.
  • Cover and let rise until double, 1 to 2 hours.
  • Bake in preheated 325° oven for 50 minutes, or until loaf sounds hollow.
