Ingredients

  • 1 c. coconut
  • 1/2 c. powdered sugar
  • 1/2 c. peanut butter
  • 1/2 c. honey
  • 1 1/2 c. crispy rice cereal
  • 1/2 c. raisins (optional)

Method

  • Place a sheet of waxed paper on a baking pan that will fit inside your refrigerator.
  • Measure coconut and place in pie pan; set aside.
  • Measure powdered sugar, peanut butter and honey and place in medium bowl.
  • Use a rubber spatula to get peanut butter and honey out of the measuring cups.
  • Stir with wooden spoon until well mixed.
  • Add cereal and raisins.
  • Stir well.
  • By hand, roll pieces of mixture into 1-inch balls.
  • Roll balls in coconut and place on waxed paper in baking pan.
  • Refrigerate for 1 hour.
  • Check to test firmness.
  • If not firm, wait for 15 to 20 minutes more.
