Ingredients
- 1 c. coconut
- 1/2 c. powdered sugar
- 1/2 c. peanut butter
- 1/2 c. honey
- 1 1/2 c. crispy rice cereal
- 1/2 c. raisins (optional)
Method
- Place a sheet of waxed paper on a baking pan that will fit inside your refrigerator.
- Measure coconut and place in pie pan; set aside.
- Measure powdered sugar, peanut butter and honey and place in medium bowl.
- Use a rubber spatula to get peanut butter and honey out of the measuring cups.
- Stir with wooden spoon until well mixed.
- Add cereal and raisins.
- Stir well.
- By hand, roll pieces of mixture into 1-inch balls.
- Roll balls in coconut and place on waxed paper in baking pan.
- Refrigerate for 1 hour.
- Check to test firmness.
- If not firm, wait for 15 to 20 minutes more.
