Ingredients
- 1/2 c. uncooked fine bulgar
- 3 c. vegetable stock
- 1/2 tsp. salt
- 1/2 c. white beans
- 3 chopped tomatoes
- 3 Tbsp. oil
- garlic
- 2 Tbsp. chopped chives
- 2 tsp. mint
- juice of 2 lemons
- 1/4 c. parsley
Method
- Boil stock, add salt and bulgar.
- Boil for 5 minutes.
- Remove from heat, cover pot and let sit for 1 to 2 hours.
- Drain excess water.
- Chill.
- Toss with all other ingredients.
- Adjust to taste.
