Ingredients

  • 1/4 lb. bacon, cooked and diced
  • 2 medium onions, diced
  • 3 Tbsp. flour
  • 3 large potatoes, diced
  • 2 tsp. salt
  • 3 c. milk
  • 3 doz. clams, shucked (reserve liquid)
  • 1 Tbsp. butter or margarine
  • 1/4 tsp. pepper

Method

  • Cook bacon until lightly browned.
  • Add onions and cook until tender, about 5 minutes.
  • Chop clams.
  • Add enough water to clam liquid to make 2 cups.
  • Stir flour into onion mixture until blended.
  • Gradually stir in clam mixture and cook, stirring constantly, until mixture is slightly thickened.
  • Stir in potatoes, salt and pepper.
  • Cover and cook until potatoes are tender, about 10 minutes.
  • Add clams, milk, butter or margarine and cover and cook until heated through for about 5 minutes, stirring often.
  • Makes 10 cups or 5 servings.
