Ingredients
- 1/4 lb. bacon, cooked and diced
- 2 medium onions, diced
- 3 Tbsp. flour
- 3 large potatoes, diced
- 2 tsp. salt
- 3 c. milk
- 3 doz. clams, shucked (reserve liquid)
- 1 Tbsp. butter or margarine
- 1/4 tsp. pepper
Method
- Cook bacon until lightly browned.
- Add onions and cook until tender, about 5 minutes.
- Chop clams.
- Add enough water to clam liquid to make 2 cups.
- Stir flour into onion mixture until blended.
- Gradually stir in clam mixture and cook, stirring constantly, until mixture is slightly thickened.
- Stir in potatoes, salt and pepper.
- Cover and cook until potatoes are tender, about 10 minutes.
- Add clams, milk, butter or margarine and cover and cook until heated through for about 5 minutes, stirring often.
- Makes 10 cups or 5 servings.
