Ingredients
- 1 (8 ounce) can navy beans
- 1 bunch cilantro
- around 10 cherry tomatoes, sliced in half
- 12 orange bell pepper
- 1 (8 ounce) can beets (or 3 small beets)
- olive oil
- 1 lemon
- salt
- white vinegar
Method
- mix all vegetables.
- Put in enough oil to cover (about 5 tbsp or a little less).
- Squeeze in 1/2 lemon.
- Add 2 tablespoons white vinegar and 1/2 tsp salt to flavor.
