Ingredients

  • 1 large can lima beans
  • 1 large can butter beans
  • 1 large can kidney beans
  • 1 can pork and beans (larger than the kidney beans)
  • 1/2 lb. bacon
  • 1 c. brown sugar
  • 1/2 c. vinegar
  • 1 chopped onion (medium)

Method

  • Drain lima, butter and kidney beans.
  • Cut up and fry bacon. Drain.
  • Save a small amount of bacon drippings (about 3 tablespoons).
  • In a large casserole, mix beans and bacon.
  • Brown onion in bacon drippings.
  • Add sugar and vinegar.
  • Cook to slightly thicken.
  • Add to beans.
  • Bake at 350° for 1 hour.
  • Freezes well. Can make sauce ahead and store in refrigerator.
