Ingredients

  • 1 1/2 lbs. ground beef
  • 2 green peppers (chopped)
  • 1 onion (chopped)
  • 2 tsp. minced garlic (from a jar)
  • 1 can 15.5 oz. red kidney beans (drained & rinsed)
  • 1 can 15.5 oz. diced tomatoes
  • 1 pkg. 1.25 oz. taco seasoning
  • 1 c. mexican style shredded cheese blend
  • tortilla chips

Method

  • Heat 12 inch non-stick skillet over medium-high heat. Brown beef. Drain and set aside. To same skillet add peppers, onions, and galic; cook until softened. Stir in beans, tomatoes, seasoning, and reserved beef. Cook, stirring, until bubbly. Sprinkle with cheese. Cover, reduce heat to low. Cook until cheese melts. serve with tortilla chips.
