Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 (12 oz.) jar chunky salsa
  • 1 c. frozen corn, drained and thawed
  • 3/4 c. mayonnaise
  • 1 Tbsp. chili powder
  • 2 c. crushed nacho chips, divided
  • 2 c. shredded Colby cheese
  • shredded lettuce
  • chopped tomato

Method

  • Preheat oven to 350°.
  • Brown meat and onion; drain.
  • Stir in salsa, corn, mayonnaise and chili powder.
  • Layer half of meat mixture,
  • chips and cheese in a 2-quart casserole.
  • Repeat layers.
  • Bake for 20 minutes or until heated through.
  • Top with lettuce and chopped tomato before serving.
