- 1 lb. ground beef
- 1 medium onion, chopped
- 1 (12 oz.) jar chunky salsa
- 1 c. frozen corn, drained and thawed
- 3/4 c. mayonnaise
- 1 Tbsp. chili powder
- 2 c. crushed nacho chips, divided
- 2 c. shredded Colby cheese
- shredded lettuce
- chopped tomato
Method
- Preheat oven to 350°.
- Brown meat and onion; drain.
- Stir in salsa, corn, mayonnaise and chili powder.
- Layer half of meat mixture,
- chips and cheese in a 2-quart casserole.
- Repeat layers.
- Bake for 20 minutes or until heated through.
- Top with lettuce and chopped tomato before serving.
- Serves
