Ingredients

  • 2 cups canned garbanzo beans, drained but liquid reserved
  • 13 cup tahini (sesame seed paste...you'll find this in the ethnic section of most large grocery stores)
  • 14 cup fresh lemon juice
  • 1 teaspoon salt
  • 14 teaspoon ground black pepper
  • 1 teaspoon fresh minced parsley
  • 2 garlic cloves, halved (if you like your hummus real garlicky, add a 3rd clove)
  • 12 teaspoon cumin
  • 14 teaspoon coriander
  • 1 tablespoon extra-virgin olive oil
  • paprika, for color
  • pita bread

Method

  • Place the drained beans, tahini, lemon juice, salt, pepper, parsley, garlic, cumin, coriander, and olive oil into a blender or food processor and blend until smooth.
  • Use a tablespoon or so of the reserved liquid from the beans to adjust thickness, if necessary.
  • Transfer the mixture to a bowl and drizzle a little extra-virgin olive oil on top in the center of the hummus.
  • Sprinkle lightly with the paprika.
  • Serve with grilled pita bread toast points.
  • This serves 15 to 20, as an appetizer.
