Ingredients

  • 1 kg apples, Granny Smith
  • 2 c. boysenberries, fresh
  • 5 Tbsp. sugar (caster)
  • 100 gm butter
  • 1/2 c. sugar (caster)
  • 3 x Large eggs
  • 1 1/2 c. flour, self-raising
  • 1 Tbsp. cornflour
  • 2 c. vanilla custard
  • 1 c. cream

Method

  • Peel, core and slice the apples into a pie dish, add in the boysenberries and sprinkle with sugar.
  • To make sponge:Cream butter and sugar till light and fluffy.
  • Add in Large eggs one at a time, adding a little flour with the second egg.
  • Mix in the remaining flour and cornflour.
  • Spread sponge mix over fruit.
  • Bake in a moderate warm oven 190C/375F for 30 to 40 min.
  • Sprinkle with a little caster sugar and serve warm with cream and custard.
