Ingredients

  • 3 eggs
  • 1 c. sugar
  • 1/2 c. margarine, melted & cooled
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. almonds, ground fine
  • 1 tbsp. anise extract
  • 2 tsp. vanilla extract
  • 1/2 c. maraschino cherries, opt.

Method

  • Beat eggs and sugar.
  • Add cooled margarine, anise and vanilla extracts. In separate bowl, mix together flour, baking powder, salt, almonds and cherries.
  • Add to creamed mixture. Shape into 2 logs and place on cookie sheet.
  • Bake 25 mins. at 375°. Remove from oven and slice into one inch slices and toast on both sides. Yields about 4 dozen.
