Ingredients

  • 2 large (400g) potatoes
  • 2 (250g) parsnips, peeled
  • 2 (250g) carrots, peeled Target 2 lb For $3.00 thru 02/06
  • 2 medium (400g) sweet potatoes, peeled
  • 1/3 cup milk
  • 1/4 cup KRAFT Easy Cheese Light Cream Cheese Spread
  • 4 slices of bread, cut into crouton sized cubes
  • garlic butter flavouring spray
  • 1 tablespoon finely chopped parsley

Method

  • Cut vegetables into even-sized pieces.
  • Steam or microwave until just tender.
  • Gently heat together the milk and cream cheese spread.
  • Place vegetables in a medium sized baking dish and cover with cream cheese spread mixture.
  • Spray bread cubes with garlic butter spray until coated, and sprinkle with parsley.
  • Toss croutons over vegetables and bake at 180C for 10-15 minutes or until golden brown.
