Ingredients

  • 2 tbsp veg oil
  • 1 small Onion chopped small
  • 1 tsp Grated Ginger
  • 3 clove Garlic crushed
  • 500 grams Pork Tenderloin
  • 1/2 can Tomatoes
  • 1 tbsp Lemon juice
  • 1 tsp Dark Soya Sauce
  • 1 Chicken stock cube
  • 1 handfull of green beans
  • 1 Salt & Pepper to taste
  • 1 tsp heaped of cornflour/starch

Method

  • Heat up the oil in a wok/ frying pan, then add the onions and fry for a few secounds mix well then add the Tomatoes and stir
  • Then add the ginger and garlic mix in and turn down the heat and simmer for 1 minute
  • Next turn up the heat and add the cut up slices of pork.
  • Then turn heat down and Cook for 5 minutes until all pork pieces are grey in colour.
  • You may need to add a little extra oil.
  • Add the Tomatoes and squeeze the lemon juice in and bring to the boil.
  • Then crush the chicken stock into it and mix and turn heat down and stir cook for 5 mins on low.
  • Add salt & pepper and mix in.
  • Add the Soya sauce and stir in and then the green beans simmer for 2 minutes
  • Lastly add the cornflour/starch mixed in a little cold water and stir in and serve while piping hot and thickened up.
  • It all takes 10-15 mins to cook.
  • Serve with Noodles or Rice.
