Ingredients

  • 3 dozen large mussels, cleaned and steamed
  • 4 Tbs sweet butter
  • 1/2 cup green onions, thinly sliced
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp oregano
  • 1 clove garlic, minced
  • 4 cups Italian style bread crumbs
  • 1/4 cup dry white wine
  • 1/4 cup freshly minced parsley
  • 3 Tbs black olives, chopped
  • 4 Tbs grated Parmesan cheese
  • 1/2 cup melted butter

Method

  • Preheat oven to 350 degrees.
  • Remove mussel meat from shells, save shells.
  • Chop mussels and set aside.
  • In a large skillet over medium heat melt butter.
  • Add green onions, salt, black pepper, oregano and minced garlic.
  • Cook until garlic is lightly browned. Transfer mixture into a bowl and
  • add chopped mussels, bread crumbs, white wine, parsley, black olives
  • and parmesan cheese; mix thoroughly.
  • Pack mussel mixture into 18 large half shells and arrange in a large
  • shallow baking pan. Drizzle butter on top.
  • Bake 10 minutes.
