Ingredients

  • vegetable oil
  • 3 cloves garlic
  • 2 1/4 pounds mussels
  • 15 ounces plum tomatoes
  • 1/2 cayenne pepper
  • 5/8 cup white wine
  • 6 3/4 tablespoons water
  • 1/2 teaspoon cayenne pepper
  • herbs de provence

Method

  • Add the oil to a skillet heated on high heat. Add the garlic and saute for 2 minutes.
  • Add the tomatoes and mash them with a wooden spoon. Reduce the heat to low and cook for 10 minutes.
  • Add the wine and turn the heat up to high for 2 minutes to allow the alcohol to evaporate. Add the water. Add cayenne pepper if a spicy flavor is desired. Cook for 3 minutes.
  • Remove the pan from the heat and add the mussels . Cover to allow them to open. Once they have opened, serve accompanied by French fries.
