Ingredients

  • 2 tsp. vegetable oil
  • 1 c. chopped onion
  • 2 c. sliced mushrooms
  • 2 garlic cloves, minced
  • 1 tsp. dried basil
  • 1/3 c. light sour cream
  • 3 oz. fettuccine, cooked and drained
  • pinch of freshly ground pepper

Method

  • In medium skillet, heat oil.
  • Add onion and saute until tender.
  • Add mushrooms, garlic and basil; saute 2 to 3 minutes longer.
  • Stir in sour cream.
  • Add fettuccine; toss to coat.
  • Heat thoroughly (do not boil).
  • Sprinkle with pepper.
  • Makes 2 servings.
  • Can double.
