Ingredients

  • 125 g (4 1/2 oz/1 cup) plain (all-purpose) flour
  • 140 g (5 oz/2/3 cup) sugar
  • 100 g (3 1/2 oz/1 cup) rolled oats
  • 90 g (3 1/4 oz/1 cup) desiccated coconut
  • 125 g (4 1/2 oz) unsalted butter
  • 3 tablespoons golden syrup or honey
  • 1/2 teaspoon bicarbonate of soda (baking soda)

Method

1. Preheat the oven to 180°C (350°F/Gas 4). Lightly grease two 28 × 32 cm (11¼ × 12½ inch) baking trays and line with baking paper.

2. Sift the flour and sugar into a large bowl. Add the oats and coconut, and make a well in the centre.

3. Combine the butter and golden syrup in a small saucepan. Stir over low heat until smooth, then remove from the heat. Dissolve the bicarbonate of soda in 1 tablespoon of boiling water and add to the butter mixture, which will foam up instantly. Add to the dry ingredients. Stir until well combined.

4. Roll level tablespoonfuls of mixture into rough balls and place onto the prepared trays, allowing room for spreading. Flatten gently with your fingers.

5. Bake for 20 minutes, or until just golden. Transfer to a wire rack to cool.
