Ingredients
- 1kg waxy potatoes
- 1 red pepper
- 1 onion (red or white)
- 1 can kidney beans, drained
- 1 small can of corn, NOT drained
- 500g low fat mayonaise
- some chopped parsley
Method
- Boil potatoes in their skins until "al dente", leave to cool, peel and cut in slices.
- Mix with peppers, beans and corn.
- Add mayonaise.
- Sprinkle with some parsley and leave to stand for 1 hour
