Ingredients
- 2 c. sifted flour
- 1 Tbsp. baking powder
- 2 Tbsp. sugar
- 1 tsp. salt
- 1 egg, beaten
- 1 c. milk
- 3 Tbsp. cooking oil
- melted butter or margarine
Method
- Preheat oven to 425°.
- Sift dry ingredients together in a large bowl.
- Mix egg, milk and oil.
- Make a well in the center of dry ingredients and pour in egg mixture all at once.
- Stir lightly and quickly just to mix.
- Batter will be lumpy.
- Grease muffin pans to about 2/3 full.
- Bake about 15 to 20 minutes until lightly brown.
