Ingredients

  • 3 to 4 lb. ground beef
  • 2 medium size onions
  • 1 large can tomato paste
  • 1 tsp. sage
  • crackers or oatmeal (both may be used to stick the meat loaf together, but I suggest crackers)
  • red or green chili peppers
  • shredded Cheddar cheese

Method

  • In a large bowl combine beef, tomato paste, sage and crackers or oatmeal.
  • Finely chop your onions and add to the mixture. Select the type of pepper you would like to use, making sure you test for hotness.
  • Add to the mixture.
  • Firmly press into a loaf pan and bake at 350° for about 2 hours.
  • About 5 minutes before being done top with the cheese and let melt on top.
  • Serve with a little salsa.
