Ingredients
- 3 to 4 lb. ground beef
- 2 medium size onions
- 1 large can tomato paste
- 1 tsp. sage
- crackers or oatmeal (both may be used to stick the meat loaf together, but I suggest crackers)
- red or green chili peppers
- shredded Cheddar cheese
Method
- In a large bowl combine beef, tomato paste, sage and crackers or oatmeal.
- Finely chop your onions and add to the mixture. Select the type of pepper you would like to use, making sure you test for hotness.
- Add to the mixture.
- Firmly press into a loaf pan and bake at 350° for about 2 hours.
- About 5 minutes before being done top with the cheese and let melt on top.
- Serve with a little salsa.
