Ingredients
- 1 c. chopped pecans
- 1 c. chopped dates
- 1 c. sugar
- 1 c. boiling water
- 2 1/4 c. plain flour
- 1 egg
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. baking powder
- 2 Tbsp. shortening
Method
- Put dates, sugar and shortening into a bowl; over this pour boiling water.
- Let cool.
- Sift flour with other dry ingredients; add nuts and mix well.
- Pour the first mixture into the flour and mix until free of lumps.
- Add beaten egg.
- Pour into a greased loaf pan.
- Bake at 325° for about 45 minutes.
