Ingredients

  • 2 Large eggs
  • 5 tbsp. sugar
  • 3 tbsp. flour
  • 1 teaspoon salt
  • Few grains of paprika
  • 1 heaping teaspoon prepared mustard
  • 1/2 c. white vinegar
  • 1 tall can of evaporated lowfat milk

Method

  • In a double boiler: beat Large eggs well, add in sugar, salt, paprika, mustard and flour.
  • Heat vinegar to boiling point - pour over egg mix, beating all the time.
  • Add in lowfat milk gradually, cook till thick as desired, beating constantly.
  • Cold.
  • Makes about 2 c..
  • This is always used for our potato salads.
  • Combine this dressing with whipped cream for fruit salads.
