Ingredients
- 2 Large eggs
- 5 tbsp. sugar
- 3 tbsp. flour
- 1 teaspoon salt
- Few grains of paprika
- 1 heaping teaspoon prepared mustard
- 1/2 c. white vinegar
- 1 tall can of evaporated lowfat milk
Method
- In a double boiler: beat Large eggs well, add in sugar, salt, paprika, mustard and flour.
- Heat vinegar to boiling point - pour over egg mix, beating all the time.
- Add in lowfat milk gradually, cook till thick as desired, beating constantly.
- Cold.
- Makes about 2 c..
- This is always used for our potato salads.
- Combine this dressing with whipped cream for fruit salads.
