- 1 onion, chopped
- 2 tablespoons olive oil
- 1 tomatoes, chopped
- 1 teaspoon garlic, minced
- 2 teaspoons turmeric
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon parsley, minced
- 1 tablespoon cilantro, minced
- 1/2 tablespoon tomato paste
- 1 cup water
- 15 ounces navy beans, drained
Method
- Saute the onion in olive oil until golden.
- Add tomato; cook.
- Add garlic; cook.
- Add turmeric, ground cumin, salt and pepper.
- Add parsley.
- Add cilantro; cook.
- Add 1 cup water.
- Add beans.
- Simmer for 20 minutes, stirring so it doesn't burn.
