Ingredients

  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 tomatoes, chopped
  • 1 teaspoon garlic, minced
  • 2 teaspoons turmeric
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon parsley, minced
  • 1 tablespoon cilantro, minced
  • 1/2 tablespoon tomato paste
  • 1 cup water
  • 15 ounces navy beans, drained

Method

  • Saute the onion in olive oil until golden.
  • Add tomato; cook.
  • Add garlic; cook.
  • Add turmeric, ground cumin, salt and pepper.
  • Add parsley.
  • Add cilantro; cook.
  • Add 1 cup water.
  • Add beans.
  • Simmer for 20 minutes, stirring so it doesn't burn.
