Ingredients

  • 4 pitas
  • 2 tsp. olive oil
  • 2 c. shredded rotisserie chicken meat
  • 1 c. marinara sauce
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1/2 c. shredded carrots
  • 1/4 c. pitted green olives
  • 1 c. shredded part-skim mozzarella cheese
  • 2 green onions

Method

  • Preheat oven to 450 degrees F. Line large cookie sheet with foil.
  • Arrange pitas on prepared pan in single layer; brush with oil.
  • In large bowl, stir together chicken, marinara sauce, cumin, cinnamon, and 1/4 teaspoon pepper until evenly coated.
  • Divide among pitas.
  • Top with carrots, olives, and mozzarella.
  • Bake 10 to 15 minutes or until cheese is melted and pitas are crisp around edges.
  • Garnish with green onions.
