- 4 pitas
- 2 tsp. olive oil
- 2 c. shredded rotisserie chicken meat
- 1 c. marinara sauce
- 1/2 tsp. ground cumin
- 1/4 tsp. ground cinnamon
- 1/2 c. shredded carrots
- 1/4 c. pitted green olives
- 1 c. shredded part-skim mozzarella cheese
- 2 green onions
Method
- Preheat oven to 450 degrees F. Line large cookie sheet with foil.
- Arrange pitas on prepared pan in single layer; brush with oil.
- In large bowl, stir together chicken, marinara sauce, cumin, cinnamon, and 1/4 teaspoon pepper until evenly coated.
- Divide among pitas.
- Top with carrots, olives, and mozzarella.
- Bake 10 to 15 minutes or until cheese is melted and pitas are crisp around edges.
- Garnish with green onions.
