- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 3/4 c. sugar
- 1 1/2 c. shredded carrot
- 2 large cooking apples, peeled, cored and shredded
- 3/4 c. coconut
- 1/2 c. raisins
- 1/2 c. chopped pecans
- 1/2 c. vegetable oil
- 3 eggs, slightly beaten
- 1 c. unsweetened applesauce
- 1/2 tsp. vanilla
Method
- Combine flour, cinnamon and soda in a large bowl.
- Stir in sugar.
- Add carrot, apples, coconut, raisins and pecans.
- Stir. Make a well in center of the mixture.
- Combine oil, eggs, vanilla and applesauce.
- Add to dry ingredients, stirring just until moistened.
- Spoon batter into greased or papered muffin pans, filling 3/4 full.
- Bake at 375° for 18 to 20 minutes or until golden brown.
- Yields 2 dozen.
