Ingredients

  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 3/4 c. sugar
  • 1 1/2 c. shredded carrot
  • 2 large cooking apples, peeled, cored and shredded
  • 3/4 c. coconut
  • 1/2 c. raisins
  • 1/2 c. chopped pecans
  • 1/2 c. vegetable oil
  • 3 eggs, slightly beaten
  • 1 c. unsweetened applesauce
  • 1/2 tsp. vanilla

Method

  • Combine flour, cinnamon and soda in a large bowl.
  • Stir in sugar.
  • Add carrot, apples, coconut, raisins and pecans.
  • Stir. Make a well in center of the mixture.
  • Combine oil, eggs, vanilla and applesauce.
  • Add to dry ingredients, stirring just until moistened.
  • Spoon batter into greased or papered muffin pans, filling 3/4 full.
  • Bake at 375° for 18 to 20 minutes or until golden brown.
  • Yields 2 dozen.
