Ingredients

  • 2 tbsp peanut oil
  • 1 lb lamb chops, trimmed, thinly sliced
  • 1 None onion, thinly sliced
  • 2 tsp ginger, finely grated
  • 1 bunch broccoli, chopped
  • 1/4 cup oyster sauce
  • 2 tbsp soy sauce
  • 2 tbsp dry sherry
  • 2 tsp brown sugar
  • None None steamed rice, to serve

Method

  • In a wok or large frying pan, heat half the oil on high. Stir-fry lamb in 2 batches, 2-3 mins each, until browned. Remove from wok. Cover to keep warm.
  • Heat remaining oil in the same pan on high. Stir-fry onion and ginger 2-3 mins, until softened. Add broccoli and stir-fry 1-2 mins until just tender.
  • For the sauace, combine oyster sauce, soy sauce, sherry and sugar. Return lamb to wok with the sauce and stir-fry for 1-2 mins until heated through. Serve with rice.
