Ingredients
- 1 small onion
- 1/2 c. river rice (not instant; Uncle Ben's is best)
- small handful of macaroni
- several pinches salt (maybe a bit more)
- about 1 qt. tomato juice
Method
- Brown
- whole
- onion
- in
- butter
- and very little water. Some salt
- may be added.
- Add at least a quart more water and bring to a boil.
- Add rice and cook about 15 minutes (not more or
- less), then add macaroni and another pinch or so of salt; cook
- about
- 10 to 12 more minutes.
- Stir often.
- Don't leave it. Add water if needed.
- Now, add 2/3 quart of tomato juice. You
- cannot
- hurry Rice
- Soup.
- If you don't have 1/2 hour to stand near, don't start to make it.
