Ingredients

  • 1 small onion
  • 1/2 c. river rice (not instant; Uncle Ben's is best)
  • small handful of macaroni
  • several pinches salt (maybe a bit more)
  • about 1 qt. tomato juice

Method

  • Brown
  • whole
  • onion
  • in
  • butter
  • and very little water. Some salt
  • may be added.
  • Add at least a quart more water and bring to a boil.
  • Add rice and cook about 15 minutes (not more or
  • less), then add macaroni and another pinch or so of salt; cook
  • about
  • 10 to 12 more minutes.
  • Stir often.
  • Don't leave it. Add water if needed.
  • Now, add 2/3 quart of tomato juice. You
  • cannot
  • hurry Rice
  • Soup.
  • If you don't have 1/2 hour to stand near, don't start to make it.
