Ingredients
- 1 lb. canned salmon
- 2 c. mashed potatoes
- 2 1/2 Tbsp. chopped parsley
- 3 tsp. lemon juice
- 2 small onions, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- plain flour
- 1 egg, beaten
- bread crumbs
Method
- Break up salmon in large bowl.
- Add potatoes, onions, parsley, lemon juice, salt and pepper.
- Form into patties.
- Coat patties with flour.
- Dip into beaten egg and then roll in bread crumbs. Fry in hot oil until golden brown.
- Serves 4.
