Ingredients
- 2 eggs
- 2 c. chopped rhubarb
- 1 1/4 c. sugar
- 4 Tbsp. flour
- 2 Tbsp. melted butter or margarine
- 2 to 3 Tbsp. half and half milk or Carnation
- 9-inch deep crust
Method
- Separate eggs.
- Beat yolks.
- Add rhubarb.
- Combine sugar, flour and butter.
- Add milk; add to rhubarb and stir.
- Beat egg whites until almost stiff.
- Fold into other mixture.
- Pour into crust.
- Bake for 10 minutes at 400°, then for 40 minutes at 350°, or until golden.
