Ingredients

  • Dough:
  • 1 envelope dry yeast
  • 1/4 tsp sugar
  • 3/4 cup warm water
  • 1 3/4 cups unbleached flour
  • 1/2 tsp salt
  • Toppings
  • 1/3 Cup Italian blend cheese or Parm
  • 1/3 cup fresh basil
  • 1/4-1/3 cup onion (opt)
  • 1 tsp olive oil
  • Sauce
  • Italian style diced tomatoes OR
  • Crush tomatoes w/ roasted garlic and onions
  • OR
  • Regular Pizza sauce - toast some anise seed and fennel seeds - grind and simmer w/ tomatoes for 20 min or so

Method

  • Combine yeast, sugar and water and let set for 10 min
  • Combine the flour and salt
  • Pour water/yeast mixture over flour
  • Knead for few min and shape into ball
  • Place in dish and find a warm place to let sit for 10 min
  • Place pizza pan in oven and heat to 500
  • Lay dough on floured surface and with floured rolling pin roll to desired thickness - something a bit thicker than hardcover book is just perfect for thin crust
  • Pull out pan from oven and lay crust on the pan.
  • Cover crust with sauce
  • Add toppings, drizzle with olive oil, cover with cheese
  • Place pizza pan back in oven for 10-12 minutes until cheese starts to bubble and turns slightly dark in color
