Ingredients

  • 1 stick butter (only)
  • 1/2 c. shortening
  • 5 large eggs
  • 3 c. sugar
  • 3 c. all-purpose flour
  • 1 c. milk
  • 1 Tbsp. rum extract
  • 1 tsp. butter and nut extract
  • 1 c. red maraschino cherries, leave them whole
  • 1 c. green maraschino cherries, leave them whole
  • 1 c. flaked coconut
  • 1 c. black walnuts or pecans

Method

  • Cream the butter and sugar until creamy.
  • Add the eggs and beat 10 minutes.
  • Be sure to time and beat 10 minutes.
  • Add other ingredients.
  • Fold in nuts, cherries and coconut.
  • Bake in Bundt pan at 325° for 1 1/2 hours.
  • Do not open the oven door for 1 hour.
