Ingredients
- 1/4 c. chopped green pepper
- 1 c. chopped onion
- 1/2 c. chopped celery
- 1 1/2 c. grated carrots
- 2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
- 3 eggs, beaten
- 6 Tbsp. butter or margarine
- 1/8 tsp. pepper
- 3/4 c. matzo meal
Method
- Mix all ingredients.
- Pour into margarine-greased 2-quart ovenproof dish, ring mold or muffin tins.
- Bake at 350° for 45 minutes or until firm.
- Serves 8.
