Ingredients

  • 8 ounces all purpose flour
  • 8 ounces chickpea flour
  • 16 ounces water
  • 8 ounces shrimp small, shelled and cleaned
  • 4 ounces onion finely diced
  • 4 ounces fresh parsley finely diced
  • 1 teaspoon sea salt
  • olive oil for frying

Method

  • Whisk together the all-purpose flour, chickpea flour, and water until there are no more lumps.
  • Stir in the shrimp, onion, parsley, and salt.
  • Let the mixture sit 2 to 3 hours.
  • In a large skillet heat up 1 to 2 fingers of olive oil on medium-high heat.
  • Drop ladlefuls of the batter into the hot oil and fry until golden and crunchy on both sides.
