Ingredients

  • 1/4 c. minced onion
  • 1/2 c. minced celery
  • 1/2 c. (1 stick) butter
  • 1 qt. peeled and diced eggplant (1 medium)
  • 1/2 c. water
  • 1/2 tsp. salt
  • 2 1/2 c. coarsely crumbled salted crackers
  • 3 c. seasoned dried bread cubes
  • 2 eggs, slightly beaten
  • 1/4 c. milk or broth
  • 1/2 tsp. poultry seasoning

Method

  • Cook onion and celery in butter over low heat. Simmer eggplant in water and salt for 10 minutes.
  • Pour both mixtures over crackers and bread cubes.
  • Add eggs, milk and poultry seasoning. Mix gently.
  • Use to stuff a 10 to 12 pound turkey.
