Ingredients
- 1/4 c. minced onion
- 1/2 c. minced celery
- 1/2 c. (1 stick) butter
- 1 qt. peeled and diced eggplant (1 medium)
- 1/2 c. water
- 1/2 tsp. salt
- 2 1/2 c. coarsely crumbled salted crackers
- 3 c. seasoned dried bread cubes
- 2 eggs, slightly beaten
- 1/4 c. milk or broth
- 1/2 tsp. poultry seasoning
Method
- Cook onion and celery in butter over low heat. Simmer eggplant in water and salt for 10 minutes.
- Pour both mixtures over crackers and bread cubes.
- Add eggs, milk and poultry seasoning. Mix gently.
- Use to stuff a 10 to 12 pound turkey.
