Ingredients

  • 1 lb. ground beef
  • 1 1/2 c. chopped onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 c. Bisquick baking mix
  • 1 1/2 c. milk
  • 3 eggs
  • 2 tomatoes, sliced
  • 1 c. Cheddar cheese

Method

  • Heat oven to 400°.
  • Grease a pie plate, 10 x 1 1/2-inch.
  • Cook and stir beef and onion in a 10-inch skillet until beef is brown; drain.
  • Stir in salt and pepper; spread in plate.
  • Combine Bisquick, milk and eggs with a wire whisk or handbeater until almost smooth, about 1 minute.
  • Pour into plate.
  • Bake 25 minutes. Top with tomatoes and cheese.
  • Bake until a knife inserted in center comes out clean, 5 to 8 minutes.
  • Garnish with lettuce. Serves 8.
