Ingredients

  • 125 g butter
  • ½ cup brown sugar
  • 1 egg
  • 1 tablespoon golden syrup
  • 1½ teaspoons mixed spice
  • 1 teaspoon ground ginger
  • 2¼ cups self-raising flour
  • icing sugar

Method

1. Beat butter and sugar until light and fluffy, add egg and golden syrup, beat until well combined.

2. Fold sifted spices and flour into creamed mixture. Roll level tablespoons of mixture into small oblongs. Continue rolling into long rope shapes about 8 cm in length, fold in half and twist. Refrigerate mixture for 20 minutes.

3. Bake at 180°C for 12–15 minutes or until golden. Cool on trays for 2 minutes. Transfer to wire rack to cool completely. Dust with icing sugar to serve.
