Ingredients
- 100 g (3½ oz/½ cup) mixed pasta twists
- 100 g (3½ oz) cooked skinless chicken breast, cubed
- 1 small carrot, grated
- 1 small zucchini (courgette), grated
- 1 spring onion (scallion), chopped
- ½ small red capsicum (pepper)
- 130 g (4¾ oz) tinned creamed corn
- 3 lettuce leaves
- 3 small tomato wedges
- 1 wholemeal pitta or pocket bread
Method
1. Cook the pasta in boiling water for 10-12 minutes, or until tender. Drain, then leave to cool.
2. Combine the pasta with the chicken, carrot, zucchini, onion, capsicum and corn.
3. Put the lettuce in the bottom of an airtight container. Spoon the chicken mixture onto the lettuce. Top with tomato wedges.
